I want to buy a cool cream cover for the handbrake and gear stick from ebay-wondering if the original plastic handbrake bellow needs to be kept for the leather to be fitted over?

You may need it for the SVA. The leather cover doesn't provide much protection from sharp edges. I should be able to let you know next week!

I have kept the rubber under the leather ones I got off eBay - but I have cut it down quite a lot. There's some sharp bits under there so if you put your hand on it the leather could get damaged (or your hand)
